We are a family cheese factory with a large tradition in the world of sheeps and cheese, located in Elgoibar (Gipuzkoa).

MAUSITXA HAMLET

Idiazabal certificate of origin

Mausitxa hamlet is located in the hillside of Urnobitza, where the blackface latxa sheeps are and where the Mausitxa cheese is made, with Idiazabal certificate of origin. Thanks to a flock of sheep of 900 sheeps, we obtain the two fundamental elements to make a good quality cheese, the milk and the natural curdling agent.

 

In order to produce this treasured cheese, we combine tradition and latest technology, using our ancestor’s system trying to improve the product.
